I'm traying to follow your steps, but I dont know why on my NAS i don't get hot swappable drive when I use RAID 5. I have TS453A.
Only as spare I see on my device. ALso when I create pool's ore volumes, there are not same staps as on your vide.

Yes, Pools are for RAIDs and volumes for actual storage.
Swappable drive or Hotspare is the drive that will take over in case of other drive failing.
