Please can you give me your opinion for 2 BAY Synology NAS, primarily for a PLEX and Picture (take care in Lightroom) storage?

You could use a simple NAS such as DS223. But if you may need faster LAN speed (maybe for video editing in the future) then DS723+ is a faster solution.
