Based on your recommendations and lack of new releases from Synology, I believe the 918+ is the correct NAS for my application.
My question is should i install HDD plus SSD Cache or just install SSD hard drives as my storage media.

Synology DS918+ is an excellent choice. If you install only SSD instead of HDD in 3.5inch bays then there is open debate whether NVMe cache would further improve things. It surely boosts performance with HDD RAID. But in some cases you might actually see improvement even with SSS on top of SSD. Since NVMe is much faster then regular SATA SSD, most often used data will be copied automatically to this faster media. So NAS doesn't need to look into a RAID to find data.My personal choice is Samsung 960 EVO and 970EVO. Samsung also offer 970 Pro for extra wear and tear in big business with hundred or more people constantly accessing data and therefore rewriting the cache all the time.I hop this helps.
