Between the Zettlab D8 Ultra and the Ugreen IDX6011 Pro, you’re very close, but for your workload the better fit is actually the UGREEN NASync DXP8800 Plus, which gives you the same 8 bay flexibility as Zettlab but with a much more mature operating system, dual 10GbE, and NVMe support. It solves the two main concerns you raised: OS maturity and RAID layout flexibility, while still giving you the large RAID6 capacity you want for long term storage.

Zettlab has good hardware, but the OS is still young, the community is small, and features like SSH and third party OS support are only “coming soon”.
