Terramaster F6 424 Max is the stronger option of the three because TOS 5 and TOS 6 already support native Plex installation and hardware acceleration, and TOS 7 is basically an evolution of that with a cleaner UI and better backup tools. Terramaster still supports Plex normally and they have confirmed that Plex will continue to work on TOS 7. The F6 424 Max also gives you six bays, dual NVMe, and a proper Intel CPU, so it fits both large photo libraries and Plex streaming from a single box. Terramaster does not currently make an eight bay in this new generation, but six bays already cover most business or home environments, especially when you run higher capacity drives.
Ugreen DXP8800 Plus looks more like a Synology inspired OS and the interface is nicer, but Plex must run through Docker because Ugreen does not support native packages. Docker Plex works, but without hardware transcoding and with less predictable performance. For huge photo libraries, Ugreen is fine, but for video streaming under load the Terramaster feels more stable at this stage. Ugreen hardware is capable, but the OS is still new and changes often.
For your use case of Plex, streaming and huge media plus documents, Terramaster F6 424 Max is the safer and faster choice. If you truly need eight bays, you would step up to something like QNAP TS 873A or QNAP TVS h874, since Terramaster does not offer an eight bay in the modern lineup. Those give you proper Plex support, NVMe acceleration and more headroom for millions of files.
