Based on what you described, I think one of the best fits for your needs right now is the Beelink NVMe NAS models. They are very compact, low power and give you multiple NVMe slots in a small Mac mini style chassis. They also work very well with ZimaOS or Xpenology if you want SHR style flexibility.
