Great choice with the DS1522+! Since you're new to NAS but want to set it up properly from the start, here’s my recommendation based on your needs:
Storage Pool Setup
Pool 1: Your 5× 14TB EXOS HDDs in SHR – This will be your main storage for long-term file storage, Plex, and backups.
Pool 2: Your Synology NVMe – This can work as a separate, fast storage pool for video editing before transferring finished projects to your HDD pool.
Using a third-party NVMe for read cache on Pool 1 is a good idea if you have a high number of small, frequently accessed files, but for video editing, a dedicated NVMe storage pool will be much faster than caching.
NVMe Choice: 400GB vs. 800GB
If you’re actively editing large video files, the 800GB NVMe is the better option for smoother performance and more working space. If budget is tight, 400GB is okay but may fill up fast.
10GbE Upgrade
Getting the 10GbE PCIe card is a great move, especially for video editing. Just make sure your network (switch and PC/Mac) supports 10GbE to fully benefit from the speed boost.
