I'm currently running a WHS 2011, but currently have a new router that supports a 10gbe output. its the asus ax11000 i was wondering whether the below would work in my whs and how much difference i would see mainly with plex.

No, there will be no Plex benefits from faster LAN. Having SSD inside your NAS will improve performance though.
