I'm wondering if it's possible to just buy a new Synology NAS, and put the HDDs into it (in the same order of course) in order to recover data. Would this work? Would some types of RAID be easier to recover than others?

Yes this is supported and is called Drive Migration
See more here: https : //www. synology. com/en-global/dsm/feature/migration

My systems:
DS1821+, 10 Gbit NIC, 32 GB RAM, 5 Exynos 14 TB (1 spare on shelf) | DS3612XS, 10 Gbit NIC, 12 WD RED 3 TB (one hot spare)
