Looking at add WD Red SN700 NAS NVMe SSD for SSD cache and was wondering if adding these will delete current data on HDD (raid 5) on DS1821+ ?

Adding a WD Red SN700 NAS NVMe SSD for cache should not delete any data that is currently stored on your HDD in a RAID 5 configuration on your DS1821+. Cache is a separate function from the main storage drives, and it is used to temporarily store frequently accessed data for faster access.
