Hi I've been looking to build a virtualization server for home use to better my studies with
- docker
- kubernetes
- vmware
- linux
- windows server
- plex usage on the side

the current build I've been considering is the following (prices based on ebay as of 03/25/2021)
2650L v3 x2 ($85 per cpu or $170)

supermicro X10DRW-i ($175)
or
supermicro X10DAL-i ($175)
or
any suggested motherboard for dual cpu

RAM
Samsung 8gb M393A1G40DB0-CPB PC4-2133P DDR4 ECC ($100 per 4 sticks of ram, would buy 2 sets so $200)

PSU
evga supernova 550w (91) or any suggested PSU, this part im not to knowledgeable on

GPU
optional, If I ever upgrade my main pc for work then I will take the 1080 from there and potentially put it in this pc. Otherwise a 1060 assuming one of my friends has / is willing to part with theirs.

HDD
seagate surveillance hdd 4TB 7200rpm (free)

Case
any suggested.

Thanks,
Gregory Maxwell Meyers

This looks like an excellent choice.Dual CPU board with ECC RAM and possibly Xeon CPUs.Maybe I would change surveillance drives with SSDs or SAS drives. You want the best IOPS possible for VMs.I hope this helps.
